Sift the flour, salt, sugar, and baking powder together into a bowl. Mix everything well, preparing the base for the perfect dough.
While whisking the mixture, gradually pour in the oat milk. Make sure there are no lumps. The mixture should become thick and smooth.
Add the remaining milk and cover the dough with plastic wrap. Leave for 30 minutes. This will allow the gluten to swell, which will make the pancakes more elastic.
Pour in vegetable oil and sparkling mineral water. Stir until the batter reaches the consistency of liquid kefir - this will ensure lightness and airiness to the pancakes.
Heat a crepe pan over medium heat and grease it with oil. Your pan is now ready to receive the first portion of batter!
Pour some batter onto the skillet and fry until the top is golden brown. Then gently flip the pancake using a spatula for a crispy texture.
Fry the pancake on the other side for about 30 seconds, then transfer to a plate, grease with butter, and serve warm. Continue making pancakes from the remaining batter, delighting yourself and your loved ones!
