Immerse yourself in the preparation process! Thoroughly wash the potato tubers with a brush to remove every speck of dust. Transfer them to a saucepan, cover with hot water, add salt, and cook over medium heat under a lid for 20-25 minutes, until they are soft and tender. Check for readiness with a wooden skewer - it should easily pierce the potatoes. Drain the broth and let the potatoes cool completely.
Forget the hassle with these easy steps! Cover the eggs with cold water and cook over medium heat for 7-8 minutes for a perfect yolk. Then drain the boiling water and immediately cool the eggs in ice water - this will help to easily peel them. To prevent the eggs from cracking during cooking, take them out of the refrigerator in advance so that they warm up to room temperature.
Cut all the ingredients into small cubes to create the perfect texture for your okroshka. Peel the eggs and potatoes. Dice the eggs, potatoes, sausage, cucumbers, and radishes into small cubes. Separate the dill, parsley, and mint leaves from the stems and finely chop them. Finely chop the green onions.
Mix all the prepared ingredients in a large bowl or pot, adding tenderness and aroma. Don't forget to add sour cream, salt and freshly ground pepper. Gently mix with a spatula or two forks so as not to damage the potato cubes.
Cool 500 ml of drinking water to a pleasant coolness. Add vinegar or a pinch of citric acid to the water to give it a sour taste. Pour the liquid into a bowl with the chopped ingredients and mix gently. Taste and determine if there is enough salt and acid in the okroshka. If necessary, pour in a little more vinegar and add salt.
The final touch before serving: cover the bowl with plastic wrap or cover the pot with a lid and refrigerate so that the okroshka infuses and cools. It will take at least an hour for the soup to become balanced and rich in flavor. Pour the okroshka into plates, add ice cubes if desired, and serve immediately.
