Preheat the oven to 180°C. Arrange the apple slices on the dough in a circle, convex side up, creating an attractive pattern. Then, pour the prepared cream evenly over them. Bake the pie in the preheated oven for 45–50 minutes, until it turns an appetizing golden brown.
While the dough is chilling, prepare the cream. In a heatproof bowl, combine the milk, cream, butter, sugar, vanilla sugar, a pinch of salt, egg, egg yolks, starch, ground ginger, and nutmeg. Place the bowl over a double boiler and, stirring vigorously and continuously, bring the mixture to a boil. Remove from heat and allow the cream to cool slightly.
Begin by preparing the dough. Sift the flour with salt into a spacious bowl. Add the softened butter, sugar, egg, and fragrant lemon zest. Pour in 2-3 tablespoons of ice water and thoroughly knead the dough. Form the dough into a ball, wrap it in plastic film, and place it in the refrigerator for 1 hour to rest and become more pliable.
On a floured surface, roll out the chilled dough into a circle. Its diameter should be approximately 4 cm larger than the diameter of your baking pan. Grease the pan with butter and line it with parchment paper. Carefully place the dough into the pan, forming high edges.
Prepare the apples for the filling. Peel them, cut each into four pieces, and carefully remove the core.
Transfer the sliced apples to a bowl, sprinkle them with fresh lemon zest, and gently mix to ensure the zest is evenly distributed.
