Begin by bringing 3 cups of salted water to a boil. Once the water is boiling, add the thoroughly rinsed millet and cook for 20 minutes until tender.
Meanwhile, prepare the cheeses and meat component. Grate the semi-hard cheese (such as Gouda) on a coarse grater. Mash the Adyghe cheese with a fork or also grate it. Finely chop the bacon (or smoked sausage). Combine the Adyghe cheese with the chopped meat. If desired, add fresh herbs for aroma.
To the prepared millet porridge, add grated semi-hard cheese and mix thoroughly so that the cheese is evenly distributed and begins to melt. Grease a baking dish with butter or vegetable oil.
Divide the millet mixture into two equal portions. Spread the first half of the millet into the prepared dish, smoothing it out gently. Evenly distribute the mixture of Adyghe cheese and cold cuts over the top. Finish the layers by adding the remaining millet porridge and leveling it.
Bake the pie in a preheated oven at 180 degrees Celsius for 30 minutes, until golden brown. After baking, let the pie cool completely in the pan before removing it, to ensure it retains its shape and structure.
