Sesame and paprika breadsticks, also known as grissini, are a traditional Italian appetizer served before the main course. They are also often offered as an accompaniment to soups and broths. The additions for grissini are varied—they include sesame seeds, salt, Provençal herbs, cheese, and much more. Before lunch or dinner, various sauces, olives, sausage, or ham can be served with the breadsticks. Crispy and aromatic grissini are easy to prepare at home; they don't require special skills and will certainly turn out well even for an inexperienced cook.

Serves:
Wheat flour - 250 g
Water - 175 ml
Active dry yeast - 5 g
Ground paprika - 2 tsp
Black sesame seeds - 2 tsp
Salt - ½ tsp

Sift the wheat flour into a suitable sized bowl. Then add salt and paprika to a bowl with sifted flour and mix all the ingredients thoroughly.

Heat water to 40°C and dissolve the yeast in it. Pour the resulting mixture into a bowl of flour and knead the dough. If you knead the dough by hand, do it for at least 4-5 minutes. If you knead the dough with a mixer (use the hook attachment), 2 minutes will be enough.

Form the finished dough into a ball in a bowl. Cover the bowl with cling film or a clean towel and let the dough rest at room temperature for 1 hour.

Once the dough has risen, knead it well and then turn it out onto a lightly floured surface. Roll out the dough with a rolling pin into a rectangle measuring approximately 30x15 cm and 1 cm thick.

Scatter half the sesame seeds over the dough and press them in lightly. Then, using a sharp knife, cut the dough sheet crosswise into strips approximately 1 cm wide.

Twist the resulting strips, slightly stretching them in length. Roll the resulting strips in the remaining sesame seeds and place on a baking sheet lined with baking paper.

Cover the baking sheet with a towel and leave the breadsticks to rest at room temperature for 20 minutes. Then move the baking sheet to an oven preheated to 220°C and bake the grissini for 7-8 minutes until they are golden brown.
