Start by preparing the main star of the jelly – the strawberries. Measure out 500 g of selected berries, wash them thoroughly under running water, and let them dry on paper towels to remove excess moisture.
Remove the green stems and cut the berries into arbitrary pieces. Combine strawberries with sugar, lemon juice, and water in a saucepan. These ingredients will create the perfect balance of flavor in your dessert.
Bring the strawberry mixture to a boil over high heat, remembering to skim off any foam that forms. Then reduce heat and cook for 10 minutes so the strawberries release their aroma and flavor.
Remove the saucepan from the heat and rub two-thirds of the berries through a fine-mesh sieve to extract the juice. Roughly chop the remaining third of the berries to add texture to the jelly.
Soak the gelatin in a small amount of cold water and let it swell for 10 minutes. Then add it to the hot strawberry juice and stir thoroughly until completely dissolved.
Pour the strawberry mixture into molds, add the chopped berries, and refrigerate for at least 3 hours to allow the jelly to set completely. Before serving, garnish with fresh berries to make the treat look even more appetizing.
