We'll roll elegant pastries from airy dough filled with nuts, generously brush them with melted butter, and bake until golden brown. The hot dessert, fresh from the oven, should be generously drizzled with syrup and allowed to soak thoroughly. This is how you'll achieve the most authentic, incredibly delicious Kataifi! This dish is made from a special, thread-like phyllo dough, which can be purchased at specialty bakeries or Middle Eastern stores.

Prepare to create a culinary masterpiece: shell the pistachios and allow the dough to thaw according to the package instructions. Don't forget to preheat your oven to 160°C 15 minutes before baking, so it's ready to receive your kataifi.
Crumble the pistachios into large pieces, then add cinnamon and mix well – this will be your aromatic filling. Carefully separate the kataifi dough into strands, forming four even lengths. Take one strand of dough, spread the nut filling along one side of the strip, then carefully roll it into a tight cylinder. Repeat this process with the remaining dough to create equally beautiful rolls.
Melt the butter until it's liquid, then thoroughly grease the sides and bottom of a baking dish with it to prevent the dessert from sticking. Arrange the prepared kataifi rolls in the dish, making sure not to pack them too tightly together – they need a little space to bake evenly. Then, generously pour the remaining melted butter over all the rolls; this will give them a golden color and a crispy crust.
Bake the kataifi in a preheated oven at 160°C for 1.5 hours, until golden brown. After baking, without removing the rolls from the pan, generously pour the cooled sugar syrup over them. Finally, garnish the finished kataifi with the remaining pistachios and let them soak for an hour, so that each piece is filled with sweetness and aroma.
Carefully transfer the soaked kataifi from the mold onto an elegant plate and serve with tea, savoring this exquisite oriental dessert.
Begin by preparing the syrup: pour water into a saucepan, add sugar, and bring to a boil. Then, reduce the heat and continue to simmer the syrup until the sugar is completely dissolved and it becomes fully transparent. Finally, squeeze the juice from half a lemon directly into the saucepan and mix thoroughly. Remove the syrup from the heat and allow it to cool while you prepare the remaining ingredients.
