Grate the chocolate coarsely so it melts easily in the pancakes. In a small saucepan, melt the butter, then add the rum and mix thoroughly. Immediately remove the saucepan from the heat. Prepare a thick-bottomed, low-sided pancake pan and heat it well over high heat.

Grease a heated pan with a small amount of fragrant rum-infused oil. Pour in a portion of pancake batter and cook for approximately 1.5–2 minutes until golden brown. Carefully flip the pancake with a spatula. Place a scant teaspoon of grated chocolate in the center of the cooked pancake.

Continue cooking the pancake on the other side for one minute, allowing the chocolate to begin melting. Then, using a spatula, carefully fold the pancake into quarters. Transfer the finished pancake to a plate. Repeat the process with the remaining batter and chocolate.
