Start by preparing the raisins: wash them thoroughly and soak them in aromatic white wine for 30 minutes to infuse them with flavor. Meanwhile, peel the apples, remove the core, and slice them neatly.
Heat a tablespoon of butter in a pan. Add the sliced apples and sprinkle them with two tablespoons of sugar. Sauté, stirring constantly, for 5 minutes. Then add the raisins along with the wine they were soaked in, and continue cooking for another 6–8 minutes until the apples are tender. Remove from heat and let the mixture cool.
Lightly mist the silicone mold with water. Transfer the apple mixture into it and spread evenly across the bottom.
Preheat the oven to 190°C. Pour the prepared batter over the apples, gently smooth it with a spatula, and bake in the preheated oven for 30–35 minutes, until golden brown.
While the pudding bakes, toast the pine nuts in a dry skillet until golden brown, which will take about 4 minutes. Allow the pudding to cool directly in its mold, then invert it onto an attractive serving dish and generously garnish with the toasted nuts. Optionally, you can dust it with powdered sugar for an extra touch of elegance.
Soften the remaining butter and beat it in a bowl with the remaining sugar until fluffy. Gradually add the eggs, one by one, continuing to beat. Then gently fold in the flour and grated lemon zest, pour in the milk, and mix until a smooth dough forms.
