Slice the croissants in half lengthwise and let them dry out, so they become the perfect base for your pudding.
Carefully crush the cardamom pods, extract the aromatic seeds, and thoroughly grind them in a mortar or finely chop them with a knife. Break the cinnamon sticks in half. Combine the cinnamon and cardamom in a saucepan, then pour in cold milk to allow the spices to release their full aroma.
If necessary, rinse and dry the raisins. Add the raisins to a saucepan with spices and milk, place over low heat, bring to a boil, and simmer for about 5 minutes to allow the raisins to absorb the flavors. Remove from heat and let cool completely. Remove the cinnamon sticks.
Whisk the eggs with salt and sugar until smooth. While continuing to whisk, gradually pour in the milk and raisin mixture until all ingredients are perfectly combined.
Grease a 20 x 30 cm rectangular baking dish with butter. Arrange the croissant halves diagonally, overlapping them so that both the bottom and top parts are crust-side up, creating an attractive pattern.
Pour the milk and egg mixture with raisins over the croissants, gently separating them so the raisins are evenly distributed. Let stand at room temperature for 30 minutes to allow the croissants to soak thoroughly.
Preheat the oven to 170°C. Place the pudding in the lower third of the oven and bake for approximately 40 minutes, basting periodically with milk if the crusts begin to dry out. Serve this fragrant pudding warm, savoring every bite.
