To begin, take the butter out of the refrigerator half an hour before you start cooking so it can soften. Then, sift the flour, peel the garlic, and prepare a baking sheet by lining it with parchment paper.
Brush the cheesecakes with egg yolk and let them proof for 30 minutes. Meanwhile, preheat the oven to 180°C. Bake the cheesecakes for 15-20 minutes until golden brown.
Serve the fragrant vatrushkas with tea on a beautiful serving plate, sprinkled with fresh herbs for brightness and freshness.
Warm the milk to a temperature slightly above room temperature. Dissolve the yeast, sugar, and salt in the warm milk. Add the eggs, stir in one cup of flour, and mix thoroughly. Cover the dough starter with plastic wrap or a lid and leave it in a warm place for 2 hours to rise.
Add the softened butter and the remaining flour to the risen sponge. Knead into an elastic dough. Cover it again with cling film or a lid and leave for another 2 hours to rise a second time.
Line a baking sheet with parchment paper. From the prepared dough, roll small balls, about the size of ping-pong balls. Place them on the baking sheet, leaving a small space between them so they don't stick together during baking.
In each dough ball, make a small indentation using a shot glass or pestle. Grate the cheese on a fine grater, press the garlic through a press, and mix thoroughly with the cheese. Place one teaspoon of the cheese filling into each indentation.
