Prepare this incredibly appetizing and vibrant fish soup that will warm you in any weather! Tender cod, pollock, or pink salmon fillet pairs perfectly with fresh vegetables: juicy red bell pepper, ripe tomatoes, aromatic onions, and crumbly potatoes. For a piquant kick, add a touch of red chili pepper, while saffron and thyme will lend the soup a unique, spicy aroma. This soup will be a true centerpiece for your table!

Prepare all ingredients: rinse the fish fillet, thoroughly wash and peel the vegetables, then rinse and dry the parsley. Get a frying pan and a saucepan ready to begin your culinary magic.
Submerge the fish fillet in a pot of water, adding one onion and a carrot. Cook until the fish is thoroughly done. Then, carefully remove the vegetables – they are no longer needed for this dish, but can be used in other culinary creations. Divide the fish into appealing pieces, and save the broth – it will form the base of our soup.
While the broth is gently simmering, finely chop the onion and add it to a heated pan with vegetable oil. Sauté until the onion becomes translucent and fragrant.
Dice the celery and garlic finely, and the bell pepper slightly larger. Add the chopped vegetables to the pan with the onion, and season with a pinch of saffron. Sauté everything together for 2 minutes to release their flavors and aromas.
Now, add the red chili pepper, thyme, and bay leaf to the vegetables. Sauté over low heat for about 5 minutes, allowing the spices to release their aroma. Crush the tomatoes and add them to the pan as well. Simmer for a couple more minutes to allow all the ingredients to meld together.
Slice the potatoes and transfer them to a pot with the broth. Add the fish and the aromatic sautéed vegetables from the pan. Simmer the soup for 15 minutes until the potatoes are soft and tender.
Season the soup to taste and pour in the delicate cream. Wait for the contents of the pot to boil, then immediately remove from heat to prevent the cream from curdling. Finely chop fresh parsley and add it to the soup, imparting freshness and a vibrant aroma.
Serve this delicious fish soup with crusty toasted bread. Enjoy every spoonful of this flavorful and hearty dish!
