Prepare for some culinary magic: sift the flour, thoroughly wash the strawberries, removing all the leaves. Get your blender and baking dish ready to start creating this wonderful dessert.
Carefully separate the egg white from the yolk. Whisk the egg white until it forms stiff, fluffy peaks – this is key to a light and airy sponge cake.
Add the yolk and sugar to the whipped egg whites. Mix thoroughly until all ingredients are combined into a uniform mass.
Using a blender, transform 120 grams of strawberries into a smooth purée, which will give the biscuit a vibrant flavor and color.
Add the fragrant strawberry mixture to the egg mixture, gently combining the ingredients.
Combine the flour with vanilla, then add the baking soda slaked with vinegar. Pour this dry mixture into the strawberry-egg mass and mix thoroughly until a homogeneous dough is obtained.
