Take the butter out of the refrigerator in advance so it can soften. Sift the flour into a deep bowl. Rinse the blueberries thoroughly in a colander. Prepare another bowl, a whisk, a plate, and either silicone muffin molds or one large 6-cup muffin tin. Place paper cupcake liners into the depressions of the tin or the small molds.
Place the softened butter in a clean bowl. Add the sugar and cream thoroughly until smooth.
Crack an egg into the bowl containing the butter-sugar mixture, then whisk everything together until smooth. Pour in the kefir and whisk thoroughly once more.
Add the baking soda to the bowl with the flour and mix thoroughly.
Combine the flour mixture with the butter and egg mixture. Stir with a spatula until a thick, viscous dough forms.
Add the blueberries and gently fold them into the batter with a spatula, being careful not to crush the berries.
Preheat the oven to 180°C. Distribute the batter into muffin tins lined with paper cups, filling them approximately two-thirds full.
Place the molds with the dough into the oven for 20 minutes. Once the cupcakes are baked, remove them from the oven and take them out of the molds along with their paper liners. Let them cool on a wire rack.
Decorate the finished blueberry cupcakes with almond flakes, powdered sugar, fresh blueberries, and sprigs of mint. Serve this wonderful dessert with tea.
