Begin by preparing the ingredients: take the butter out of the refrigerator in advance and cut it into small cubes. Make sure the eggs are at room temperature—this is crucial for achieving the perfect dough texture.
Add 1.5 tablespoons of cottage cheese filling to each indentation. Then, brush the edges of the vatrushkas with a mixture of egg yolk and milk using a pastry brush to give them a golden hue.
Bake the vatrushki in an oven preheated to 180 degrees Celsius for 25–30 minutes, until golden brown. After baking, let them cool slightly on a wire rack, then dust with powdered sugar for a finishing touch.
Serve these delightful vatrushki with sour cream, your favorite preserves, or jam. Savor every bite of this homemade wonder!
Add 3.5 tablespoons of sugar, salt, and yeast to the warm milk. Whisk thoroughly and leave this mixture in a warm place for 10 minutes to allow the yeast to activate and begin its magical work.
Next, incorporate the egg and softened butter into the milk mixture. Whisk thoroughly once more, then gradually add the flour. Knead until you have a smooth, elastic dough. Cover it with plastic wrap and let it rest in a warm place for 1 hour to allow it to rise properly.
Once the dough has risen, divide it into 6-8 equal balls. Gently roll each ball until perfectly smooth, without any creases. Place them on parchment paper and leave them covered with a towel for another 10 minutes to rise slightly.
Carefully press down each dough ball with the bottom of a glass, creating an indentation for the filling. This will form the perfect base for your vatrushka.
While the dough is rising, prepare the filling. In a separate bowl, combine the egg yolk, cottage cheese, 3 tablespoons of sugar, 2 tablespoons of sour cream, and vanilla sugar. Blend all ingredients with an immersion blender until a smooth and fluffy mixture is formed.
