Serves:
Olive oil Filippo Berio Olive Oil - 1 tbsp
Bacon - 2 pc
Pineapple chunks - 4 pc
Flour - 450 g
Pizza sauce - ½ cup
Mozzarella cheese - 1 pc
red onion - 1 pc
1
Preheat oven to 500 degrees F (260 degrees C) with rack in low position. Grease a large rimmed baking sheet with olive oil.
2
Meanwhile, heat a large skillet over medium heat. Add bacon and cook, turning occasionally, until golden brown and crisp, 5 to 7 minutes. Transfer to a plate lined with paper towel.
3
Pour out the drips without wiping the pan and return it to the heat. Add pineapple and cook until lightly browned and caramelized, 3 minutes on each side. Remove from pan. Chop the bacon and cut the pineapple rings into 3/4-inch pieces.
4
On a lightly floured surface, roll out the dough to a 12-inch circle and place on a greased baking sheet. Prick the dough with a fork several times to reduce the number of air bubbles. Spread the pizza sauce evenly over the dough, leaving 1 1/2 inches around the edges. Sprinkle with cheese, red onion, Canadian bacon, sliced pineapple and chopped bacon.
5
Bake in the preheated oven until the curd is melted and bubbly, the filling is lightly charred, and the crust is golden brown, 10 to 15 minutes. Let stand 5 minutes before serving.
