This lemon jam is named purely nominally, because essentially it is a sweet preparation that people commonly call a "five-minute." Which is very good in itself, because it retains beneficial substances better, as the heat treatment is minimal. Such jam should be stored in the refrigerator: due to its high citric acid content, it is unlikely to mold, but it may crystallize. But rest assured, such a delightful treat won't linger long on the shelf: it is pleasant to eat on its own, add to tea, and also use as a supplement to cheesecakes, pancakes, and porridges.

Prepare the jam ingredients. Wash the lemons thoroughly with a brush or stiff sponge and dish soap to remove the waxy layer that manufacturers use to coat citrus fruits.
Without peeling, cut the lemons into thick slices. Remove the seeds. Pass the lemon slices through a meat grinder with a fine wire rack into a wide saucepan or basin. Add sugar and leave for 6-8 hours. Stir occasionally.
Place the container with the lemon mixture over low heat and heat until the sugar is completely dissolved. After this, remove from the stove and let cool completely.
Pour the resulting lemon jam into dry, sterilized jars and cover with plastic lids. Put it in the refrigerator. Store for 3-4 months.
