Milk - 250 g
Butter 60% - 4 g
Sugar - 30 g
Blueberry - 5 g
cocoa powder - 5 g
mint fresh - 2 g

Grind the eggs with sugar, add warm milk with butter, add salt and gently cover with flour. Bake pancakes on both sides in butter.

For caramel. Melt the sugar over low heat until caramelized, carefully pour in the cream, but do not bring to a boil. Remove from heat, break the egg into it and mix until smooth, adding butter. Bring everything until smooth, add salt at the very end. Cool the resulting caramel.

Beat sugar with yolk until smooth, mix with mascarpone cheese and add cream. Sprinkle cocoa powder on top and garnish with a mint sprig.

Place the pancakes on a plate with salted caramel sauce, brush with tiramisu, sprinkle with cocoa and lay out fresh berries, garnish with mint.
