Tartlets are a quite popular appetizer, often prepared for various holidays and buffets. Tasty and appetizing baskets with filling quickly disappear from the table. Today, I suggest preparing tartlets with beets, hard cheese, and herring. Such a juicy and vibrant appetizer is suitable for any occasion. It's the perfect combination of taste and beautiful presentation. There is a wide range of ready-made tartlets available for sale, so it's not necessary to make them yourself. I used wafer baskets for the recipe. If you want to prepare the appetizer in advance, use shortcrust tartlets, as they do not get soggy and remain crispy for longer.

Wash the beetroot thoroughly, place it in a pot, cover with cold water, and boil until cooked. Cooking medium-sized vegetables will take 45-60 minutes, while large root vegetables will take up to 90 minutes. You can also wrap the vegetables in foil and bake them in the oven at 180 degrees Celsius. Cool the vegetables to room temperature.
Boiled beets, peel the skin and grate with a coarse grater. Grate the hard cheese in the same way and add it to the beets.
For a spicy note, add a clove of garlic pressed through a press. Salt the mixture to taste, season with ground black pepper, and dress with a small amount of mayonnaise.
Mix the ingredients until smooth.
Slice the lightly salted herring fillet into pieces 2 cm wide.
Fill the tartlets with the cheese-beetroot mixture. Top with pieces of lightly salted herring. Garnish the appetizer with sprigs of fresh dill.
If you want the tartlets to stay crispy longer, place fresh salad leaves at the bottom of the baskets beforehand.
For garnishing the appetizer, you can use green onion stalks or young beet leaves. Serve the appetizer immediately after preparation. Enjoy!
