When zucchini season arrives, you want to cook as many different dishes with them as possible. I recently tried a new delicious and healthy zucchini dish. The recipe turned out so delicious that I just had to share it with you. Zucchini and oatmeal syrniki (cheese pancakes) are airy and tender, with an appetizing golden crust. They do not contain flour, and thanks to the right proportions, you can really taste the cottage cheese. Together with sour cream, these syrniki are perfect for a Sunday breakfast.

Cheese Sour milk - 250 g
vegetable marrow - 200 g
Chicken eggs C1 - 2 pcs.
Cereals - 3 tbsp
Garlic - 1 clove
Salt - ½ tsp
ground coriander - ½ tsp
Ground black pepper - ⅕ tsp
Parsley, cilantro, green onion - ⅕ bunch
Vegetable oil for frying - 50 ml

Wash the zucchini, cut off the ends, and grate it on a grater with a large grating surface. Squeeze the vegetables to remove excess juice, and transfer to a deep bowl. If you are using young vegetables, you do not need to peel the skin beforehand. In more mature vegetables, remove the skin and core with large seeds.
Add 2 chicken eggs and medium-fat cottage cheese to the zucchini.
Grind the oatmeal flakes into flour using a blender or coffee grinder, add to the resulting mixture. Add salt and spices to taste, I used black pepper and ground coriander. For flavor, add a clove of garlic passed through a press, finely chopped green onions and parsley.
Thoroughly mix the ingredients until a smooth consistency is achieved. Leave the cottage cheese dough for 15 minutes at room temperature so that the oat flour absorbs the excess liquid.
Moistening your hands in cold water, form small, round cheesecakes of the same size. Gently place them on a frying pan with heated oil.
Fry the products over low heat until golden brown on both sides.
Ready-made syrniki with zucchini and oatmeal should be placed on a plate lined with paper towels to remove excess oil.
Serve the fragrant syrniki hot with sour cream or plain yogurt. Enjoy!
