Thoroughly wash and dry the strawberries. Carefully remove the leaves. Prepare a saucepan, sterilized jars, and a sieve for the next steps.
Cut each strawberry in half. If the strawberries are very large, cut them into smaller, more manageable pieces for preservation.
Carefully transfer the sliced strawberries into the pre-sterilized jar, taking care not to damage the berries.
Pour water into a saucepan and place it over medium heat to begin preparing the syrup.
Add sugar to a saucepan with water. Stir thoroughly until the sugar is completely dissolved. Then, pour in the vanilla extract and mix well again. Bring the syrup to a boil, reduce the heat, and simmer for another 2 minutes, stirring constantly. Remove the finished syrup from the stove.
Carefully pour the hot syrup over the strawberries in the jars, ensuring the berries are completely submerged. Seal the jars tightly with lids, allow them to cool to room temperature, then store them in a cool place.
Serve the fragrant strawberries in syrup, garnished with a fresh sprig of mint for an extra touch of charm and freshness.
