Okroshka is one of the most summery soups, which can be prepared with various bases. The most delicious version is obtained by mixing several drinks. For this recipe, take kefir that is not too sour and not too thick; 1% fat content is ideal. Dilute it with tan to the desired consistency. The salty taste of tan with a slight sourness will perfectly complement the kefir, creating a refreshing and harmonious combination.

Thoroughly wash all the vegetables and fresh herbs.
Boil the pork in simmering water until thoroughly cooked, which will take approximately 1 hour. Afterward, remove the meat, allow it to cool, and dice it into small cubes. Transfer the cubed meat to a saucepan.
Boil the eggs in a pot for 10 minutes once the water has come to a boil. Afterward, immediately transfer them to ice water to cool down. Peel the eggs and chop them into small cubes. Add these to the meat in the pot.
Finely chop the herbs, salt them, and mash them with a pestle to release their juices. Transfer the prepared herbs to the rest of the ingredients.
Dice the radishes and cucumber to match the size of the meat and eggs. Add them to the pot with the other ingredients. Season with salt and pepper to taste. Mix all ingredients thoroughly.
Pour the kefir over the vegetables and meat. Dilute with tan to the desired consistency. Mix thoroughly and chill the okroshka before serving.
Serve okroshka with tan and kefir immediately after preparation, enjoying its freshness and taste.
