Sweet red pepper - 2 pcs.
Parsley - 5 bunch
Spearmint - 3 bunch
capers - 2 tbsp.
Garlic - 3 clove
Lemon juice - 2 tbsp.
Salt - to taste
Black pepper - to taste
Extra virgin olive oil - 4 tbsp.

Preheat the oven to 200°C. Place the peppers on a rack and roast until the skin becomes shiny and charred, which will take approximately 15–20 minutes. Then transfer the peppers to a bowl and cover with a lid, leaving them for 20 minutes to "finish cooking."
Carefully peel the skin from the peppers, remove the seeds and membranes. Cut the peppers into thin, long strips. Drain the beans in a colander to remove excess liquid.
Separate the parsley and mint leaves from their stems (we won't need the stems). Finely chop the parsley and mint leaves. Peel and mince the garlic.
In a large salad bowl, combine the beans, chopped bell pepper, minced herbs, and capers.
In a small bowl, combine lemon juice, salt, freshly ground black pepper, minced garlic, and olive oil. Dress the salad with the resulting mixture, toss thoroughly, and let it rest for 10 minutes to allow the flavors to meld.
