Begin by preparing the lightly salted herring fillet: carefully remove it from its packaging and slice it diagonally into pieces 1.5–2 cm thick. If the fillet was in brine, be sure to drain any excess liquid and pat it dry with paper towels for the best results.
Thoroughly wash and pat dry the fresh dill with paper towels. Finely chop only the leaves, setting aside the stems. Add the chopped dill to the prepared sauce. Place the herring pieces into this aromatic sauce, gently stir to ensure each slice is coated, and refrigerate. For the best flavor, let it marinate for 24 hours, but if time is short, at least overnight.
To assemble the sandwiches, peel and finely dice the onion. Sprinkle the diced onion over the slices of Borodinsky bread. On top, arrange several slices of pickled herring in dill-mustard sauce. To complete the presentation and add freshness, garnish each sandwich with sprigs of dill and serve immediately.
In a separate bowl, prepare the marinade base by combining whole-grain mustard with Dijon mustard. For an extra kick, add a touch of regular hot mustard to give the dish a piquant flavor.
Add white wine vinegar, sugar, and sour cream to the mustard mixture. Thoroughly mix all ingredients until smooth. Then, gradually pour in the sunflower oil in a thin stream, stirring continuously, until the sauce emulsifies and becomes smooth and glossy.
