Start by preparing the vegetables: thoroughly wash the beets, leaving them unpeeled. Peel the potatoes and carrots.

Place the beets in a pot, cover with water, and bring to a boil over medium heat. Once boiling, reduce the heat to low and simmer the beets for approximately 50-60 minutes, or until tender. Cooking time may vary depending on the size of the vegetable.
