Ministerial Salad is an exquisite yet simple-to-prepare dish where tender beef perfectly complements fluffy omelet and juicy vegetables. The salad earned its unusual name because it was once served in ministry canteens, considered an elite treat. Today, you can easily prepare it at home. This recipe offers a classic version with beef, but you can experiment with any other meat to your taste.

Step 1

Rinse the beef thoroughly and pat it dry with paper towels. If necessary, remove any sinews and membranes. Boil the beef in salted water until fully cooked. Wash the eggs. Peel the onion. Prepare a frying pan.

Heat a skillet with vegetable oil. In a separate bowl, whisk the eggs with salt. Pour half of the egg mixture into the skillet and cook the pancake for 2-3 minutes, then transfer it to a plate. Repeat the process with the remaining half of the egg mixture.

Roll the egg pancakes into tubes and cut them into thin strips. Shred the boiled beef into fibers or cut it into small pieces. Finely julienne the pickled cucumbers. Finely dice the onion. Transfer the onion to a heated pan with oil and sauté, stirring, for 2-3 minutes.

In a deep bowl, place the shredded beef. Add the julienned egg pancakes, pickled cucumbers, and fried onions. Dress the salad with mayonnaise and season with salt to taste, then mix thoroughly.
