Start by preparing the pancake batter. Sift the wheat flour into a large bowl. In a separate container, vigorously whisk the chicken eggs with sugar and salt until smooth. Then add the milk and continue whisking. Pour this mixture into the flour and mix thoroughly to ensure there are no lumps.
Boil water and dissolve the diced butter in it. Once the butter has completely melted, add this buttery water to the pancake batter and mix well again until smooth. For convenience, you can use a mixer.
Heat a heavy-bottomed skillet over medium heat. Lightly grease it with a small amount of vegetable oil. Pour the first portion of batter onto the skillet and spread it evenly in a circular motion to form a thin pancake.
Once one side of the pancake is golden brown, carefully flip it over and cook the other side. For subsequent pancakes, you don't need to grease the pan with oil, as there's enough fat in the batter. Stack the finished pancakes on a plate.
Once all the pancakes are ready, start preparing the filling. If you already have pre-sliced lightly salted salmon, that's excellent. If you have a fillet piece, slice it into the thinnest and longest possible strips.
Thoroughly wash the dill and pat it dry with paper towels to remove excess moisture. Finely chop only the tender parts of the herb; the stems can be set aside for use in soups.
Mash the cream cheese with a fork and mix it with the chopped dill. If the cheese seems too thick, add a little cream to achieve a smooth, spreadable consistency.
Take a single pancake, spread it out on a flat surface, and generously coat it with a thin layer of cream cheese and dill. Carefully arrange several slices of red fish in a row on top.
Carefully roll the pancake into a tight cylinder, ensuring the fish slices are arranged lengthwise. Repeat this procedure for all remaining pancakes. Once all the salmon and cream cheese rolls are prepared, slice them crosswise into several smaller, individual portions.
