Banana fritters are a delightful dessert that, in appearance and taste, resembles churros. They are made from a simple batter and deep-fried in a generous amount of oil until golden brown and crispy. Inside, a tender, sweet, and aromatic banana pulp is hidden, becoming even more exquisite under high temperatures. This dessert is the perfect combination of crispy on the outside and melt-in-your-mouth soft on the inside.

Rice flour - 0.3 glass
Coconut milk, 7-9% fat content - ½ glass
Sugar - 1 tbsp.
vanilla sugar - 1 g

Refined sunflower oil - 1 glass
Ground cinnamon powder - 0.3 tsp.

Prepare all ingredients: wash the banana and peel it. Take the milk out of the refrigerator to bring it to room temperature. Sift the wheat and rice flour into one bowl. Get a deep frying pan and a slotted spoon ready. Line a dish with paper towels to absorb excess oil after frying.
Into a bowl with the sifted flour, add the sugar, salt, baking soda, and vanilla sugar. Thoroughly whisk all the dry ingredients together to ensure they are evenly distributed.
Pour room temperature milk into the dry mixture. Whisk the mixture vigorously until a smooth, thick, and viscous batter is formed. Let the batter rest for 30 minutes to achieve the desired consistency.
Slice the peeled banana into pieces about 1-1.5 cm thick, making slight diagonal cuts for a more interesting shape.
Once the batter has rested, carefully place the sliced banana pieces into it. Mix thoroughly to ensure each banana slice is completely coated with the batter.
Pour sunflower oil into a deep skillet. Place the skillet over high heat and thoroughly heat the oil until it just begins to smoke.
Carefully, using a spoon, place the battered banana pieces into the hot oil. Fry them, stirring occasionally with a slotted spoon, until a beautiful golden crust forms. This will take approximately 3-4 minutes.
Place the finished battered bananas on a dish lined with paper towels. Allow excess oil to absorb into the paper, then transfer the bananas to a serving plate.
Dust the hot, battered bananas with powdered sugar and ground cinnamon for added aroma and sweetness. Serve immediately while they are still warm and crispy!
