Khorovats is the Armenian name for a dish cooked on a mangal, whether it's meat or vegetables. In this recipe, we will show you how to prepare vegetable khorovats – a delicious appetizer made from vegetables grilled over an open flame. This dish is based on juicy tomatoes, tender eggplants, and aromatic bell peppers, creating a perfect combination of flavors and textures.

Thoroughly wash and dry all vegetables and herbs. Peel the garlic. Light the charcoal grill so it's ready for roasting.
Place the whole eggplant, tomatoes, and peppers on the grill. Roast them over coals until tender: tomatoes for about 10 minutes, peppers for 15 minutes, and eggplant for approximately 15-20 minutes. Bury the unpeeled onion directly in the coals for 7 minutes to impart a special aroma.
While the peppers are still hot, place them in a regular bag, tie it tightly, and leave for 10 minutes. This trick will help to easily remove the skin. Then peel the tomatoes, onions, and eggplant.
Dice the bell peppers, tomatoes, eggplant, and onion into small cubes. Finely chop the herbs. Press the garlic through a garlic press. Combine all the ingredients in a single bowl. Add salt and pepper, mix thoroughly, and let it sit for 10 minutes for the flavors to meld.
Serve the khorovats, savoring its fresh taste, which pairs perfectly with shashlik.
