Prepare the mackerel: carefully cut off the head and thoroughly remove all entrails. Then rinse the fish under running water and pat dry with paper towels. Prepare cellophane bags and a deep dish for salting.
In a separate bowl, thoroughly mix the sugar and salt until combined. Use this mixture to generously rub the mackerel on all sides, including the cavity. Place the prepared fish into a plastic bag, set the bag in a deep dish, and refrigerate for 24 hours to cure.
After 24 hours, remove the fish from the bag and rinse thoroughly under running water to remove excess salt. Then, pat the mackerel dry with paper towels and cut it into neat, even pieces.
Serve this appetizing mackerel as an elegant appetizer to the main course. To add a special charm and flavor to the dish, garnish the fish with thinly sliced red onion rings, arranging them on the plate next to the mackerel pieces.
