To prepare this wonderful pork roast, you will need the simplest ingredients: tender pork, aromatic onions, rich tomato paste, as well as salt, pepper, bay leaf, and a little vegetable oil. Gather everything you need, and we'll begin creating a culinary masterpiece!
Take the pork, thoroughly clean it of membranes, and pat it dry with paper towels to remove excess moisture. Then, slice the meat thinly across the grain, and subsequently cut these slices into small, narrow strips, each weighing approximately 15 grams. This will ensure even cooking and tenderness in every piece.
Transfer the sliced meat to a bowl, season generously with salt and freshly ground black pepper, then mix thoroughly to ensure every piece is infused with the flavor. Slice the large onion into thin half-rings, and finely chop the garlic. These aromatic additions will give the dish a unique taste.
Heat a little vegetable oil in a pan and add the pork. Let the liquid evaporate, then fry the meat until golden brown and almost fully cooked, which will take 15-20 minutes. Remember to turn the pieces periodically so they brown evenly on all sides. Transfer the cooked pork to a plate.
To the same pan where the pork was cooked, add one tablespoon of vegetable oil and heat it again. Add the chopped onion. Reduce the heat and sauté the onion for 3-4 minutes until it becomes translucent. Be careful not to burn the onion; it should remain tender and fragrant.
Return the seared pork to the pan with the sautéed onions. Add the tomato paste and sprinkle with minced garlic. Mix everything thoroughly and sauté over medium heat for another 2 minutes to allow all the ingredients to combine and release their flavors.
Then, pour one cup of hot water into the pan with the meat and add the bay leaf. Cover the pan and simmer for 10-15 minutes to make the meat even more tender and the sauce thicker. At the end of cooking, be sure to taste the sauce and add salt if necessary to perfect the flavor.
Serve this delicious pan-fried pork roast with boiled potatoes or any other side dish, whether it's grains or fresh vegetables. For the perfect side dish, boil peeled and diced potatoes in salted water for about 20 minutes. Then drain the water and dry the potatoes in the pot over heat to make them crumbly and aromatic.
