On one half of each rolled-out circle, place approximately 50 grams of ground meat, distributing it evenly.
Moisten the edges of the circle with water, then carefully cover the filling with the second half of the dough. Gently press the dough around the filling to release air and tightly seal the edges.
Carefully crimp the dough along the edges with your fingers to ensure a secure seal and prevent juice from leaking out during frying.
To give the chebureks a classic appearance and extra sealing, trim the edge of the dough with a pastry wheel or carefully press with a fork.
Pour vegetable oil into a saucepan and heat it over medium heat. Fry the chebureks two at a time, until golden brown on both sides.
Transfer the finished, golden-brown chebureki to a baking sheet lined with paper towels to absorb excess oil. Serve hot and enjoy!
From the listed ingredients, knead a firm and elastic dough. Cover it with an inverted bowl and let it rest for 30 minutes.
Divide the rested dough into equal portions, each weighing approximately 60 grams. Roll each portion into a neat ball, cover with plastic wrap, and let rest for 10 minutes to make the dough even more pliable.
Roll each ball of dough into a thin circle 12–15 cm in diameter. The thinner the dough, the crispier the chebureki will be.
Begin by preparing the filling: mince the lamb by putting it through a meat grinder or finely chopping it. Then, finely dice the onion and mince the garlic.
Season the chopped onion with salt and thoroughly mash it with your hands. Combine the meat with the onion, garlic, and freshly ground black pepper, then mix well. Set the minced meat aside while you prepare the dough.
