Begin by dicing the onion or slicing it into half-rings, and grate the carrots using a coarse grater. Sauté the onion and carrots in a pan with olive oil until golden brown, then add 75g of butter.
Add the chicken liver to the roasted vegetables and slightly increase the heat. Sauté the liver, stirring constantly, for about 5-7 minutes until browned. Then pour in the brandy and cook for another two minutes until the alcohol has completely evaporated.
Pour in the cream and bring the mixture to a boil, simmering for another two to three minutes. Add fresh thyme, black and allspice, and nutmeg. Season with salt to taste.
Transfer the cooked liver and vegetables to a blender and blend until smooth and uniform. Spoon the pâté into molds and carefully smooth the top. Melt the remaining butter and gently pour it over the surface of the pâté. Refrigerate the pâté until set. Your delicious pâté is ready to serve! Enjoy your meal!
