This salad features seven distinct layers: tender boiled potatoes, succulent chicken breast, sweet prunes, aromatic boiled egg yolks, fresh cucumber, and grated cheese. The composition is crowned with a fluffy topping of grated egg whites. The key secret is to let the salad rest, allowing all the layers to meld and fully develop their flavors. Begin by preparing: thoroughly wash the cucumber and potatoes, then blanch the prunes. Have three small saucepans, a grater, and a square baking dish ready and within reach.
Pour enough water into the pot with the potatoes to completely cover the tubers. Place over medium heat. After boiling, add ¼ teaspoon of salt and cook until tender for about 20–25 minutes. Then cool and peel the potatoes.
In another saucepan, pour 2-3 cups of water and bring to a boil over high heat. Reduce heat to medium, add ¼ teaspoon of salt, and submerge the chicken fillet. Cook the poultry until done, 15-20 minutes, then let it cool directly in the broth.
In the third pot, hard-boil the eggs. Place them in water and cook for 8–9 minutes after it comes to a boil. Cool the eggs in cold water and carefully peel them.
Separate the eggs into whites and yolks, then grate them individually on a fine grater. Using the same grater, finely chop the cucumber and hard cheese. Cut the boiled chicken fillet, potatoes, and prunes into neat cubes with sides of 4–5 mm.
Place the cooking mold on a flat plate. First, layer the potato cubes, gently press them down, lightly salt, and cover with a thin layer of mayonnaise.
Place prunes over the potatoes, then add the chicken fillet. Spread mayonnaise over it and cover with a layer of fresh cucumbers, also spread with mayonnaise.
Finish the layers by placing grated egg whites and yolks over the cucumbers, then add another layer of mayonnaise with salt.
Garnish the salad with grated cheese, fresh herbs, and prunes to give it an appetizing look and extra flavor.
