Begin your culinary adventure by preheating the oven to 160°C. Prepare a baking dish by lining it with parchment paper. Halve the zucchini lengthwise, carefully scoop out the pulp, leaving walls about 1 cm thick. Finely chop the removed pulp, and generously salt the zucchini "boats" from the inside.
Peel and grate the carrots and garlic. Sauté the diced zucchini, carrots, and garlic in vegetable oil for 5–7 minutes until golden brown. Transfer the fragrant mixture to a bowl.
Add the egg, semolina, and ground chicken to the bowl with the sautéed vegetables. Season with salt, pepper, and khmeli-suneli, then mix all ingredients thoroughly until well combined.
Slice the tomatoes into rounds about 1 cm thick. Drizzle the baking paper in the pan with vegetable oil, arrange the tomatoes on top, and season lightly with salt and pepper.
Fill the zucchini with the prepared minced meat and vegetable stuffing, pressing it down firmly and forming an appetizing mound. Arrange the stuffed zucchini on top of the tomatoes in a baking dish and bake in the upper part of the oven for 25–30 minutes until cooked through. Serve hot and savor this wonderful dish!
