Take a pineapple, wash it thoroughly, and pat it dry. Cut it lengthwise in half, keeping the green top attached. Using a melon baller, carefully scoop out the flesh from both halves. Wrap the pineapple skins in plastic wrap and set them aside. Reserve half of the pineapple flesh for the salad, and the remaining portion can be used for other culinary creations. If you don't have a melon baller, simply cut the pineapple flesh into neat 1.5 cm cubes.

Separate the frisée lettuce into individual leaves. Wash them thoroughly using a salad spinner and pat dry. Set aside a few small, attractive leaves for garnishing the finished dish. Roughly tear the remaining leaves.

Squeeze the juice from the lemon. Wash the apples, peel them, cut them into quarters, remove the core, and slice them into small pieces. Then, sprinkle them with lemon juice to prevent browning. Peel the oranges and cut them in half. Squeeze the juice from one half of an orange. Cut the remaining orange pulp into small segments.

Peel the bananas and slice them into rounds. Wash the grapes and remove them from the stem. If the grape berries are very large, cut each in half and remove the seeds.

In a large bowl, combine the frisée lettuce and all the prepared fruits. Carefully arrange the salad in the pineapple halves, drizzle with the delicate mint cream, and garnish with the remaining frisée leaves. Serve immediately, savoring the freshness and vibrant flavors!

Prepare an aromatic dressing. Blend fresh mint into a puree. Whip the cream with sugar, adding squeezed orange juice. Then gently fold in the mint puree and carefully stir.
