Begin with the potatoes: scrub them thoroughly, then wrap each potato individually in foil. Bake in a preheated oven at 220 °C for 40–50 minutes, with the cooking time varying based on potato size. Check for doneness by piercing a potato with a thin knife – it should be tender yet still firm.
While the potatoes are baking, prepare the remaining ingredients for your American potato salad. Hard-boil the eggs (8–10 minutes), then quickly cool them in cold water.
Peel the red onion and rinse the celery stalk. Dice the celery, onion, and pickled cucumber into small pieces. Wash the fresh parsley, pat it dry with paper towels, and finely chop it, removing the stems.
Remove the cooked potatoes from the foil, rinse them with cold water, and carefully peel off the skin. Cut the potatoes into 2–2.5 cm cubes or wedges and transfer them to a large bowl. While the potatoes are still warm, drizzle them with white wine vinegar and olive oil, then season with salt and pepper. Let them sit for a while to absorb the flavors.
Peel the eggs and dice them into approximately 6mm cubes. Add them to the potatoes in the bowl, then pour in the prepared dressing made from vegetables, mayonnaise, yogurt, and mustard. Gently mix all the ingredients to ensure they are evenly distributed.
Cover the bowl with plastic wrap and refrigerate for several hours, or preferably overnight. This allows the potatoes to fully absorb the dressing and develop their flavor. Before serving, taste the salad and add more salt or pepper if needed.
Prepare the dressing: combine mayonnaise with natural yogurt and mustard. Add the chopped onion, cucumber, celery, and parsley to this mixture. Mix thoroughly, season with salt and freshly ground black pepper to taste. Your flavorful dressing is ready!
