First, thoroughly wash and dry all the vegetables and herbs. Peel the garlic and onion. Prepare your blender so everything is at hand.
Place the shelled walnuts, garlic cloves, salt, and pepper into a blender. Process all ingredients until a smooth paste forms.
Finely chop fresh cilantro. Add it to the nut dressing along with fragrant khmeli-suneli. Mix thoroughly to combine all the flavors.
Boil the water, then pour in both types of vinegar and mix thoroughly. Pour this mixture over the nut dressing. Stir well again and let the dressing cool.
Slice the cucumbers and onions into thin rounds, and the tomatoes into neat wedges. Finely chop the parsley.
Transfer all the chopped ingredients into a deep bowl. Pour the cooled nut dressing over them and mix thoroughly to ensure every piece is infused with the flavor.
