Divide the risen dough into thirty equal portions. Form each portion into a ball and leave them covered with a towel for 15 minutes. Then, flatten each ball into a disc and fill with the apple and nut mixture. Carefully pinch the edges together, shaping each "pie" into a ball.
Transfer the formed balls into a rectangular baking dish with high sides (approximately 12x25 cm), previously greased with oil or lined with parchment paper. Arrange them tightly, in several layers, so that they fill the dish.
Evenly distribute the remaining apples over the top of the pie. Cover the top of the form with plastic wrap and leave it in a warm place for about half an hour. The balls should significantly increase in volume, approximately doubling in size.
Preheat the oven to 175°C. Bake the pie for 40–45 minutes. Ten minutes before it's done, cover the top of the pie with foil to prevent it from burning. Let the pie cool slightly in the pan (10 minutes), then carefully transfer it to a wire rack.
Gradually incorporate the remaining powdered sugar, whisking the glaze until it becomes white and fluffy. Transfer the slightly warm apple pie to a serving plate, drizzle with the prepared glaze, and serve immediately, savoring every bite.
While the pie cools, prepare the glaze. Pour half of the powdered sugar into a bowl. Add the vanilla and almond extracts, then pour in the water. Stir with a silicone spatula until smooth.
Begin by preparing the dough. Dissolve the yeast and sugar in warm milk, then let this mixture sit for 15 minutes to allow the yeast to activate. Meanwhile, melt the butter. Sift the flour with salt and add it to the milk mixture, kneading thoroughly until smooth.
Pour the melted butter into the dough. Continue kneading until the dough is smooth and no longer sticks to your hands. Form the dough into a ball and let it rise in a warm place twice, punching it down after the first rise each time. This process may take about three hours.
Begin preparing the filling. Peel the apples, cut them into quarters, and remove the cores and seeds. Dice the flesh into 5–7 mm cubes and transfer them to a large bowl.
Add the brown sugar and lemon juice to the sliced apples, then mix thoroughly. Roughly chop the walnuts with a knife on a cutting board and add them to the apple mixture. Mix well again.
