Start by preparing the pearl barley: pour the groats into a colander and rinse thoroughly under warm water until the water runs completely clear. This will help remove excess starch and make the porridge more crumbly.
Transfer the rinsed pearl barley to a deep container. Pour cold water over it so that the water covers the groats by 2 cm. Leave the pearl barley to swell for 2 hours – this will significantly reduce the cooking time.
While the pearl barley is soaking, prepare the other ingredients. Cut the pumpkin flesh into neat, small cubes. Peel the onion and chop it finely. Mince the garlic cloves. Also, cut the pork into small cubes.
Heat a heavy-bottomed saucepan over medium heat. Pour in the olive oil. Once the oil is hot, add the chopped onion and sauté until translucent, soft, and fragrant.
Add the pork and garlic to the fried onions. Sauté over medium heat for about 5 minutes, stirring occasionally to ensure the meat browns evenly and doesn't stick. Then, add the pumpkin cubes, season with salt and pepper, and mix thoroughly. Continue to fry everything together for another 5 minutes, allowing the pumpkin to release its aroma.
Drain the swollen pearl barley in a colander to remove all excess water. Transfer the pearl barley to the saucepan with the meat and vegetables. Pour vegetable broth over everything. Bring to a boil and season with salt to taste, taking into account the saltiness of the broth.
Reduce the heat to low, cover the saucepan, and simmer the pearl barley with pumpkin and pork for 30 minutes. If you prefer to bake, transfer the saucepan (if oven-safe) to a preheated oven at 180 °C and braise, covered, for 40 minutes. This will give the dish exceptional tenderness and richness.
Grate the hard cheese on a coarse grater. Add it to the cooked pearl barley with pork and vegetables, mix thoroughly so that the cheese melts and coats every ingredient. Taste the dish and, if necessary, add more salt and pepper to perfect the flavor. Serve hot and enjoy!
