Wash the eggplants and cut off the stems. Grate them using a coarse grater. Add salt, stir, and let sit for 15-20 minutes to remove the bitterness. Squeeze the eggplants thoroughly to remove any excess liquid.
Add the eggs, minced garlic, flour, salt, and pepper to the roasted eggplants. Mix thoroughly until a smooth, uniform consistency is achieved.
Heat the vegetable oil in a frying pan over medium heat. Spoon the batter out to form pancakes (about 1 cm thick).
Fry the pancakes on both sides until they are golden brown and fully cooked, about 3-5 minutes per side. Once done, place the pancakes on a plate lined with a paper towel to remove any excess grease.
Serve warm. They can be accompanied by lactose-free sour cream or a tomato paste-based sauce.
