Preheat the oven to 200 °C. Place a sheet of parchment paper on the pastry base and fill it with dry beans or peas to weigh it down. Bake for 20 minutes. Then remove the paper and weights and bake for another 12–15 minutes, until golden brown.
Place the green beans and chopped herbs on the baked crust, then pour the egg and sour cream mixture over everything. Reduce the oven temperature to 185°C and bake for 10 minutes.
Reduce the temperature to 160°C and continue baking the pie for another 40-50 minutes, until fully cooked.
Serve the pie warm or chilled, savoring its delicate flavor and aroma.
Sift the flour with salt into the bowl of a food processor, then add the cold butter, cut into cubes, and process until crumbly.
Add the egg and, while continuing to mix, gradually pour in the ice water, one tablespoon at a time, until a soft and pliable dough is formed. Shape it into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
Roll out the dough into a circle and carefully line the bottom and sides of a 23 cm diameter pan, trimming off any excess. Prick the dough all over with a fork. Place the pan in the refrigerator for 30 minutes.
Finely chop the herbs. Whisk the eggs with sour cream and milk, then season with salt and pepper to taste.
