Begin by preparing: thoroughly wash the vegetables and herbs, then pat them dry with paper towels. Remove the stem and seeds from the pepper. Rinse the canned chickpeas with cold water. Prepare a baking sheet by lining it with parchment paper.
Cut all the vegetables into neat, small strips so they cook evenly and look appealing in the salad.
Transfer the chopped vegetables to a large bowl and drizzle generously with olive oil, mixing thoroughly to coat each piece.
Preheat the oven to 200°C. Spread the vegetables evenly on the prepared baking sheet, season with salt and pepper to taste, and roast for 10 minutes until tender and lightly golden.
