To begin the magic, pour milk into a saucepan and add heavy cream (33% or more) to make the drink smooth and prevent curdling. Add sugar to sweeten it.
Next, sift the cocoa powder directly into the saucepan. If it's alkalized, your drink will have a deeper flavor and richer color. Sifting will help prevent lumps and create a perfectly smooth texture.
Place the saucepan over medium heat and, stirring constantly, bring the mixture to a gentle simmer. Add half of the chocolate and the aromatic orange zest. Don't forget to save a little zest for the final touch!
Melt the remaining chocolate in the microwave. Be careful not to overheat it – just a few seconds will suffice. Stir until smooth.
