Begin by preparing all the vegetables: wash and dry them thoroughly. Peel the carrots and garlic. Remove the stem and seeds from the chili pepper, and trim the ends off the green beans. Prepare a sterile 0.5-liter jar and lid so everything is ready for the magic.
Add bay leaf, sugar, salt, allspice, and black pepper to a saucepan. Pour in water. Place over high heat, bring to a boil, then allow the marinade to cool completely so it can infuse with the flavors.
While the marinade cools, mince the garlic and slice the chili pepper into thin rings. Add these aromatic ingredients to the cooled marinade so they can begin to infuse their flavor.
Place the beans in a clean pot and cover with water. Bring to a boil over high heat and cook for just 3 minutes. Then, quickly drain the hot water and immediately immerse the beans in cold water to preserve their vibrant color and crisp texture.
Grate the carrots and place them in a clean pot. Add the chilled beans and pour the aromatic marinade over everything. Place a weight on top and leave this preparation in a cool place for a full 3 days for the flavors to meld perfectly.
Your torsha is ready! You can enjoy it immediately or transfer it to a sterilized jar, pour the remaining marinade over it, seal it tightly with a lid, and store it in a cool place to prolong the enjoyment.
