Zucchini fried with soy sauce and garlic is a simple yet surprisingly vibrant dish, where the tender texture of the vegetables meets the rich spiciness of Eastern flavors. When pan-fried, the zucchini becomes soft inside and lightly browned on the outside, while the soy sauce imparts a noble salty-umami note. Soy sauce - 50 ml
Corn starch - 1.5 tsp.
ground coriander - ½ tsp.
Sugar - 1.5 tsp.
Salt - ⅕ tsp.
Olive oil for frying - 30 ml
Dill fresh - 0.3 bunch

Wash the zucchini, and trim the ends. Cut the vegetables into 1 cm thick sticks. If you are using young vegetables with thin skin, you don't need to peel them beforehand.

Place the chopped zucchini in a pan with heated olive oil.

Stirring occasionally, sauté the vegetables over medium heat for 5-6 minutes until lightly golden.

In a separate bowl, combine cornstarch, sugar, black pepper, and ground coriander. Add a little salt to the mixture, keeping in mind that soy sauce is also salty. If you are using concentrated soy sauce, salt should be excluded from the list of ingredients. For aroma, add garlic cloves pressed through a garlic press.

Pour the soy sauce into the mixture. Mix the ingredients until smooth.

Add soy sauce with garlic, starch, and spices to the fried zucchini. Gently mix the vegetables.

Continue to simmer the zucchini over low heat for 1-2 minutes until the sauce thickens.

Garnish the finished dish with chopped dill. Serve the zucchini fried with soy sauce and garlic immediately after cooking, or chill them in the refrigerator beforehand.
