We're preparing a vibrant, aromatic appetizer with a rich flavor and a subtle spicy kick. Korean-style oyster mushrooms with vegetables can be served alongside roasted chicken, shashlik, or as an accompaniment to potatoes, rice, or other side dishes. They taste even better the next day, once the flavors have melded further. The tender mushrooms absorb the spicy marinade, carrots add a sweet crunch, onions provide juiciness, and garlic contributes its characteristic pungent note. The dish is simultaneously fresh, spicy, and very appetizing, with a pleasant balance of sour, salty, and hot. Optionally, you can add bell pepper, sesame seeds, and a touch of soy sauce for a deeper flavor.

Carrot - 500 g
Onion - 200 g
Garlic - 4 clove
Korean-style Carrot Seasoning - 1 tsp.
Salt - ½ tsp.
Sugar - ½ tsp.
Apple cider vinegar 6% - 30 ml
Refined sunflower oil - 50 ml
Bay leaf - 2 pcs.
Allspice - 2 pcs.
Dill fresh - ⅕ bunch

Wash and peel the carrots. Shred the vegetables into long, thin strips using a grater designed for Korean-style carrots.

Peel the onion, cut it into medium-thick quarter rings.

Wash the oyster mushrooms, remove the tough base near the stems. Cut the mushrooms into long strips.

Place the oyster mushrooms in a pot of boiling salted water. Add bay leaf and allspice for flavor.

Simmer the mushrooms for 10 minutes, then drain them in a colander.

In a deep bowl, combine the chopped onion and grated carrots.

Add boiled oyster mushrooms to the vegetables.

For aroma, add garlic pressed through a press.

Stir, then add the Korean carrot seasoning.

For the marinade, combine apple cider vinegar (6%), refined oil, salt, and sugar in a saucepan or small pot. Stir the ingredients, then bring the marinade to a boil.

Pour boiling marinade over the oyster mushrooms and vegetables. Stir the appetizer, cover it with a lid or plastic wrap, and refrigerate for at least 4 hours, preferably overnight.

After the specified time, the Korean-style oyster mushrooms with vegetables will be marinated and ready for consumption.

Serve this vibrant and juicy appetizer chilled, garnished with fresh dill.
