Prepare all the necessary ingredients: sift the flour, thoroughly wash the orange and pumpkin. Remove seeds and peel from the pumpkin. Get your blender and cake pan ready.
Grate the pumpkin flesh on a fine grater, and carefully remove the zest from the orange. Then, squeeze 100 ml of fresh juice from the orange.
Separate the eggs into whites and yolks. Whisk the yolks with regular and vanilla sugar until a fluffy, light mixture forms. Set aside the egg whites for later use.
Add the whipped egg yolks and sugar to the grated pumpkin and mix thoroughly.
Combine the sifted flour with the baking powder and gradually incorporate this mixture into the pumpkin and egg mixture. Stir thoroughly until smooth.
Whip the egg whites with a pinch of salt until soft peaks form. Gently fold the whipped egg whites into the pumpkin batter, maintaining the airy texture.
Finely chop the almonds. Add the chopped nuts, orange zest, and orange juice to the dough. Mix gently.
Grease a bundt pan with vegetable oil and sprinkle with semolina. Pour the prepared batter into the pan.
Preheat the oven to 180°C. Bake the cake for 50 minutes. After baking, let the cake cool slightly in the pan, then remove it and cool completely on a wire rack.
Dust the cooled cupcake with powdered sugar for a beautiful finish and serve with tea, enjoying every bite.
