Place a small amount of the fragrant onion filling in the center of each pastry square. Carefully bring the corners of the dough together over the filling and firmly pinch all the edges to prevent the pastries from opening during baking. Brush the pastries with a lightly beaten egg. Bake the puff pastry pies with fried onions in a preheated oven at 200 °C for 20–25 minutes, until golden brown.
To begin, to make onion pies from frozen puff pastry, allow it to thaw. Transfer the dough from the freezer to the refrigerator and wait until it becomes soft.
Remove the softened dough from the refrigerator and let it sit at room temperature for another 30-40 minutes to warm up. During this time, prepare the filling for the puff pastries.
Lightly roll out the dough, trying to move the rolling pin in only one direction to maintain the layered structure. Cut the dough into large squares. You should get 8 pieces.
Peel the onions and dice them into small cubes. Place a thick-bottomed pan over low heat, pour in the vegetable oil, and heat it thoroughly. Add the chopped onions and, stirring frequently, sauté them until they turn a beautiful golden-brown. Allow the onions to cool, then season with salt and pepper to taste.
