Prepare for culinary magic: thoroughly wash and peel all root vegetables, as well as the onion and garlic. Grab a non-stick pot and get your blender ready – they will be your trusty companions in creating this delightful soup.
Place a pot with olive oil over medium heat. Dice the onion finely and add it to the pot. Sauté the onion, stirring constantly, for 5-7 minutes, until golden and fragrant.
Cut the potatoes, carrots, celery, and parsnips into arbitrary pieces. Mince the garlic to fully release its aroma.
Add the chopped root vegetables to the pot with the sautéed onions. Stir thoroughly and cook everything together for another 5 minutes. Then, add the minced garlic and mix well again to combine the flavors.
Crumble the bouillon cubes directly into the pot. Pour in room temperature water until it completely covers all the ingredients. Stir and bring to a boil, anticipating the rich flavor of the future soup.
Reduce the heat to low, loosely cover the pot with a lid, and let the soup simmer for 20 minutes. Remember to stir occasionally to ensure all ingredients cook evenly.
Remove the soup from the heat. Using a blender, process it until perfectly smooth. Add salt and pepper to taste, then stir thoroughly once more to ensure the spices are evenly distributed.
